Monsoon is here and the weather is turning lovely. The rain pouring outside ignites the food cravings within us.

Rainy season is the time we look out for yummy dishes to treat our taste buds.

But that's the time where one needs to be a bit health conscious as well in order to avoid the acne, which gets common in monsoon.

Then what should be the way out for that monsoon food craving?

Well the answer is ‘soups'. Soups have been an all time favourite dish for all the foodies and the health freaks. And with the temperature going down with the arrival of monsoon, soups can be the best to satisfy your craving.

Here are 4 delicious soup recipes, which you can try this monsoon and that will make your rainy season deliciously enjoyable:

Cream of Mushroom Soup

Ingredients

Mushrooms, onions, butter, corn flour, garlic, ajwain, thick cream, vegetable stock, black pepper powder, salt and coriander.

Method:

1. Take 2tbsp of butter in a pan and heat it. Now add 450gms sliced mushrooms along with salt as per taste and stir it till the mushrooms turn golden brown.

2. Take chopped onion (1 in quantity) along with 1tsp of finely chopped garlic and cook for two minutes.

3. Add vegetable stockand ½ tsp of ajwain and mix it well. {Vegetable stock comprises of large onions, medium carrots, stalks of celery, whole bulb of garlic, peppercorns and a bay leaf}

3. Cook it on a low flame till the soup starts to bubble. Lower the flame and cook it for 30-40 minutes.

4. Blend the soup with the help of a hand blender till it becomes smooth. Add ½ cup of cream to the soup and stir it.

5. Cook for another few minutes on a low flame as you add salt and black pepper powder to it.

6. Soup is ready. Garnish it with fresh coriander leaves before serve.

 

French Onion Soup

Ingredients:

Onions, maida, vegetables, bread, cheese, butter, garlic, bay leaves (tej patta), salt and black pepper powder.

Method:

1. Take 1 cup of butter in a pan and heat it. Now add 500gms of finely chopped onions along with 2 bay leaves and cook it for 3-5 minutes till the onion turns light brown.

2. Add one and ½ tbsp of maida, mix it well and cook for 5 minutes before adding vegetable stock.

3. Cook the soup till it comes to boil and then lower the flame and cook it for 45 minutes.

4. Sprinkle salt and pepper powder as per your taste.

5. Take 6-8 bread slices and toast them. Spread grated cheese on it and grill it till cheese melts completely.

Serve the soup with the crispy cheese toasts.

Ginger Soup

Ingredients:

Ginger, corn flour, dry red chillies, garlic powder, tomato puree, butter, salt, black pepper powder

Method:

1. Take 1tbsp of butter in a pan. Now add 2 tbsp of finely chopped ginger, 2-4 crushed dry red chillies, 1 tsp of garlic powder and cook it.

2. Add ¼ cup of corn flour and sauté it for 2 minutes till the raw smells disappears.

3. Now add 4-5 cups of water along with 1 cup of tomato puree to it and mix it well.

4. Cook it on a low flame and sprinkle salt and black pepper powder as per taste.  

Serve it hot.


Capsicum Soup

Ingredients:

Sliced capsicum, sliced tomatoes, water, milk, cheese spread, salt, butter and black pepper powder.

Method:

1. Take 4 slicked capsicums along with 2 sliced tomatoes and 1 cup of water and cook it in microwave for 3 minutes and allow them to cool.

2. Now blend them in a mixer with the help of 1 cup of water to make a smooth puree.

3. Strain the puree in a bowl and add ½ cup of milk, 2 tsp of cheese spread and 1 tsp of butter. Sprinkle salt and black pepper powder as per taste.

4. Microwave the soup for 6 minutes.  

Serve it hot.
