
Chickpea and Mint Crostini
Ingredients
1 small baguette, thinly sliced and toasted
2 scallions, chopped
Rinsed chickpeas
1/2 cup pomegranate seeds
Black pepper
Salt
2 tbsp olive oil
1/4 cup chopped fresh mint
Note: You can also use crushed beetroot
Method
Take a bowl and mix all the ingredients, now sprinkle some salt, pepper, splash some olive oil and serve with bread.
