New Delhi: Tuesday is here! If you are a typical non-vegetarian then Tuesday is and will always be a nightmare for you.If all vegetarian food makes your Tuesdays dull and boring then don't be disheartened.
3. Dum Aloo: Dum Aloo is a very popular vegetarian dish from Kashmir, India. It is made from potatoes which are first deep fried, then cooked slowly at a low flame. It is popular in India and Indians love having Dum Aaloo.
Ingredients-Half kg of potatoes, a cup of curd, bay leaves, grated onion, tablespoon of ginger and garlic paste, tablespoons of ghee, half cup of milk, pinch of asafoetida, half tablespoon of turmeric powder, tablespoon of red chilli powder, cardamoms, teaspoon of coriander seeds, black peppers,cloves, One small piece of cinnamon, Oil for frying Salt to taste
Method
1. Blend cardamoms, black peppers, coriander seeds, cloves and cinnamon together and make a fine powder out of it.
2. Remove the peels of the potatoes and make holes using knife in them.
3. Pour a little oil in a frying pan and heat it on a medium flame. Slice the potatoes and fry them until their colour turns golden brown. Take them out and keep them aside.
4. Take the same pan or another pan with a little oil and add the grated onion, pinch of asafoetida, bay leaves and ginger–garlic paste to it.
5. Fry them till they turn reddish-brown colour.
6. Add the fine powder of cardamoms, black peppers, coriander seeds, cloves, cinnamon and heat for about 3 minutes. Next, add turmeric powder and chilli powder to it. Mix it properly for a minute.Add half cup of milk to it and mix it well.
7. Add 2 cups of curd to it and keep stirring it well. You can add a little water to it if it becomes too thick.
8. Now add the fried potatoes to it and cook it in pressure cooker. Remove it after 6-7 minutes before the pressure cooker whistles.
9. You can garnish it with mint leaves or coriander leaves.

4. Stuffed Karela with Cheese- Bitter gourd in your vegetable basket, does it sound like a turn off? Don't worry this recipe of sliced karelas stuffed with an aromatic filling, rolled in spices and pan fried will cheer you up.
Key Ingredients: Olive Oil, Bitter Gourd, Onion, Bell Pepper, Broccoli, Tomato, Brown Sugar, Cinnamon, Kashmiri Mirch, Balsamic Vinegar, Gram flour
Method
1. Peel and cut the karelas lengthwise in half, scoop out the seeds and inner flesh.
2. Sprinkle them with salt to release the moisture.
3. Drain the excess water and keep the karelas pressed under a heavy weight, overnight or for 3-4 hours.
For the filling:
1. Heat 2 tablespoons of oil in a pan and saute the onion, bell pepper, broccoli for about 30 seconds.
2. Mix in the tomato, salt, basil leaves, cinnamon powder, clove powder, brown sugar, balsamic vinegar and red chilli flakes.
3. Cook for for another 40 seconds approx and remove from the stove.
For the spice dust:
1. In a big dry plate, mix the besan, corn flour, onion powder, garlic powder and jeera powder together
For the karelas:
1. Stuff the karela halves with the filling and grated cheese.
2. Close both half tightly and roll them in this spice dust
3. Heat enough oil to pan fry the karelas for 3-4 minutes on each side.
4. Cut into cubes and serve hot.
5. Gobi Manchurian- Gobi Manchurian is one of the dishes which are loved in all family in India. This is a simple recipe which can add lots of flavour too your boring food.
Ingredients- Cauliflower, All purpose flour, Corn flour, Chilli powder, Pepper powder, Salt, Water, Onion, Garlic, cloves, Ginger, Colored peppers, Tomato sauce, Chilly sauce, Soya sauce, Oil
Method
1. Seperate the florets and put in hot water for 5 minutes.
2. Mix all the other ingredients.
3. Dip the florets and deep fry in oil and drain excess oil on the paper towel.
4. Take a non stick pan. Pour 2 tbsp oil and saute the onions, ginger and garlic.
5. Add the colored pepper and saute for 2 mins .
6. Add the tomato sauce, chilli sauce and soy sauce and mix a little.
7. Finally add the fried cauliflower florets into the mixture.
8. Mix it and garnish with finely chopped green onions or cilatro.
9. Serve it with fried rice, pulav or chappathi.
