Baba Ghanoush

A Levantine dish, Baba Ghanoush is made of eggplant (brinjal) mixed with onions, tomatoes, olive oil and various seasonings. There are various methods to prepare this dish. While at some places the eggplant is first baked, while at other places, it is first roasted to give a smoky taste. The dish does not only have different methods of cooking but can also vary in the use of seasonings as well. The seasonings popularly used in baba ghanoush are garlic, lemon juice, ground cumin, salt and mint.

Al Kabsa

A traditional Middle Eastern dish, Al Kabsa is a mixture of spices, rice, meat and vegetables. One can use lamb, beef or chicken, lamb, or beef in the dish.

But the important part of the dish is kabsa spices. Nowadays pre-mixed kabsa spices are available under several brand names.  Al though readymade spices may reduce the preparation time, the taste of dish might slightly vary from the traditional dish.
